This easy sausage casserole is built around simple ingredients and plenty of flavour. Browning the sausages first gives the sauce extra depth, while potatoes and carrots make it a complete one-pot dinner.
It is a useful family recipe because it needs very little attention once everything is simmering. It also reheats well, so you can make it ahead for busy evenings or batch-cook extra portions.
For a self-catering ski holiday, this is exactly the sort of meal that works well after a day on the mountain. Serve it with crusty bread, steamed greens or simply on its own.
Ingredients
- 8 pork sausages
- 1 large onion sliced
- 2 garlic cloves crushed
- 3 medium carrots peeled and cut into thick slices
- 500g potatoes peeled and cut into 3cm chunks
- 1 tbsp olive oil
- 2 tbsp tomato purée
- 400g tin chopped tomatoes
- 500ml chicken or vegetable stock
- 1 tsp dried thyme
- 1 tsp smoked paprika
- 1 bay leaf
- Fine salt, to taste
- Freshly ground black pepper, to taste
- Chopped parsley, to serve (optional)
Method
- Heat the olive oil in a large casserole dish over a medium-high heat. Add the sausages and brown them for 6 to 8 minutes, turning regularly. Lift them out and set aside.
- Add the onion to the same dish and cook over a medium heat for 5 to 6 minutes until softened.
- Add the garlic, carrots and potatoes and cook for another 2 minutes.
- Stir in the tomato purée, thyme and smoked paprika and cook for 1 minute.
- Pour in the chopped tomatoes and stock, add the bay leaf and return the sausages to the dish. Season with black pepper and a little salt.
- Bring to a gentle simmer, cover and cook over a low heat for 45 minutes, stirring occasionally.
- Remove the lid and simmer for another 15 to 20 minutes until the potatoes and carrots are tender and the sauce has thickened.
- Remove the bay leaf, taste and adjust the seasoning. Scatter with chopped parsley, if using, and serve hot.
