This cheesy potato and bacon bake turns a handful of familiar ingredients into a rich, comforting dinner. Tender potato, smoky bacon and sweet onion are layered with mature Cheddar and baked in a creamy sauce until golden.
It is an easy choice for a cold evening, a family dinner or a filling meal after a day outdoors. Most of the ingredients are common fridge and cupboard staples, and the bake can be assembled before it goes into the oven.
Serve it with steamed green vegetables or a crisp salad. Leftovers reheat well in the oven or microwave, making this a useful lunch for the next day too.
Ingredients
- 1kg potatoes peeled and cut into slices about 4mm thick
- 200g smoked bacon chopped
- 1 large onion thinly sliced
- 2 garlic cloves crushed
- 25g butter
- 200ml double cream
- 200ml whole milk
- 150g mature Cheddar cheese grated
- Fine salt, to taste
- Freshly ground black pepper, to taste
- A small handful of chopped chives or parsley, to serve (optional)
Method
- Heat the oven to 200°C, 180°C fan, Gas 6. Lightly butter a large ovenproof baking dish.
- Put the sliced potatoes into a large saucepan of salted boiling water. Simmer for 5 minutes, then drain carefully and leave to steam dry for a few minutes.
- Meanwhile, put the bacon in a large frying pan over a medium heat and cook for 5 to 6 minutes until beginning to crisp. Lift it out with a slotted spoon and set aside.
- Add the butter and sliced onion to the same pan. Cook gently for 6 to 8 minutes until soft. Stir in the garlic and cook for another minute.
- Mix the cream and milk together and season lightly with salt and plenty of black pepper.
- Arrange half the potatoes in the baking dish. Scatter over half the onion, bacon and Cheddar. Add the remaining potatoes, onion and bacon, then pour the cream mixture evenly over the top.
- Finish with the remaining Cheddar. Cover loosely with foil and bake for 30 minutes.
- Remove the foil and bake for another 20 to 25 minutes until the potatoes are tender and the top is bubbling and golden.
- Leave the bake to stand for 10 minutes before serving. Scatter with chopped chives or parsley, if using.
