Raclette is built around melted cheese, hot potatoes and simple things to eat alongside them. At home, an electric raclette grill makes it easy for everyone to melt their own cheese while cooking vegetables and bacon on the hot plate.
Raclette cheese gives the most traditional flavour and melts particularly well. Keep the potatoes warm after boiling them so the cheese stays soft when it is scraped over the top.
This is an especially useful self-catering ski meal because most of the preparation can be done in advance. Put everything on the table, heat the grill and let everyone cook and assemble their own plate.
Ingredients
- 800g Potatoes, preferably small waxy potatoes
- 500g Raclette cheese, sliced
- 150g sliced Ham
- 8 rashers Bacon, cut into smaller pieces
- 250g Mushrooms, sliced
- 1 large Onions, sliced
- 2 Peppers, deseeded and sliced
- 1 tbsp Olive oil
- 200g Bread, cut into chunks
- black pepper, to taste
Method
- Put the potatoes in a large saucepan, cover with cold water and bring to the boil. Simmer for 15 to 20 minutes until tender, then drain and keep warm.
- While the potatoes cook, arrange the raclette cheese, ham, bacon, mushrooms, onions, peppers and bread on serving plates.
- Heat the raclette grill according to the manufacturer's instructions. Toss the mushrooms, onions and peppers with the olive oil.
- Cook the bacon and vegetables on the hot grill plate in small batches until the bacon is cooked through and the vegetables are tender and lightly charred.
- Place slices of raclette cheese in the individual pans and heat under the grill until completely melted and bubbling.
- Divide the warm potatoes between plates, add ham, bacon and grilled vegetables, then scrape the melted cheese over the potatoes. Season with black pepper and serve with the bread.
