Austrian-inspired
This easy apple strudel gives you the warm spiced flavour of the Austrian classic without the fuss of making strudel dough from scratch. Using ready-rolled filo pastry keeps it approachable while still giving a crisp, flaky finish.
A mixture of apples, raisins, cinnamon and breadcrumbs makes a filling that stays soft and fruity rather than watery. Brushing the pastry with melted butter helps the layers turn beautifully golden in the oven.
Serve it warm with a dusting of icing sugar, or with cream, custard or vanilla ice cream if you want a more indulgent dessert. It is especially good as a cosy chalet-style treat after a cold day outdoors.

- Heat the oven to 200°C, 180°C fan, gas 6. Line a baking tray with baking paper.
- Put the sliced apples in a large bowl with the sugar, cinnamon, raisins, breadcrumbs and lemon juice. Toss well to combine.
- Lay one sheet of filo pastry on a clean work surface and brush lightly with melted butter. Repeat with the remaining sheets, overlapping them to form a rectangle.
- Spoon the apple mixture along one long side, leaving a border around the edges.
- Fold in the short edges, then roll the pastry up to enclose the filling. Place the strudel seam-side down on the prepared tray.
- Brush the outside with the remaining melted butter.
- Bake for 30 to 35 minutes until crisp, deeply golden and cooked through.
- Leave to cool for 10 minutes, then dust with icing sugar before slicing and serving.
